Easy Coconut Biscotti

Ingredients

  • 1-1/2 cup flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • 1 tsp salt
  • ¾ cup sugar
  • 1 TBSP vanilla extract
  • 2 eggs
  • 1 cup sweetened coconut
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 300. Line a baking sheet with a silicon mat.
  2. In the bowl of an electric mixer with the paddle attachment mix all the ingredients together until combined.
  3. Shape the dough into a log that is 15-inches by approximately 3 inches.
  4. Bake for 40 minutes.
  5. Take it out of the oven and cut into 1-inch strips and place each piece on its side.
  6. Bake for an additional 20 minutes.
  7. Cool completely.
