Spiced Zucchini Bundt Cake
Ingredients

shredded zucchini
excess water drained

cup
coconut oil
¼
cup
skim milk

tsp
vanilla extract

eggs
room temperature
2-3/4

whole wheat flour
or almond flour
1-1/2
tsp
baking soda

tsp
salt

TBSP
cinnamon
¼
tsp
nutmeg
¼
tsp
ground ginger

sugar
Instructions
Spray a bundt pan with non-stick cooking spray.
Preheat oven to 350.
In an electric mixer fitted with a paddle attachment combine all the ingredients except the zucchini until combined.
Fold in the zucchini.
Pour into the prepared pan and bake for about 1 hour or until a toothpick comes out clean.
Cool completely.
