A New Christmas Cookie - Gingerbread Blondies

Ingredients

  • ¾ cup unsalted butter room temp
  • 2 cups light brown sugar
  • 2 eggs
  • 1 TBSP vanilla extract
  • 3 tsp freshly grated ginger
  • 1 TBSP ground ginger
  • 1 TBSP cinnamon
  • ½ tsp baking soda
  • 1 tsp salt
  • 2-1/4 cups flour

Instructions

  • 1- Preheat oven to 350°. Grease a 8x8 baking pan and set aside.
  • 2- In the bowl of an electric mixer with the paddle attachment cream butter and sugar until light and fluffy.
  • 3- Add gingers, baking soda, cinnamon, salt, then mix at low speed to blend.
  • 4- Add eggs one at a time & vanilla extract and mix until combined.
  • 5- Add flour and mix on low speed until blended.
  • 6- Pour into prepared pan and bake for 40 minutes.
  • 7- Cool completely.
