Crust Less Quiche with Nellie’s


  • 12 Nellie’s Free Range Eggs
  • 2 lbs asparagus chopped
  • 6-9 mushrooms chopped
  • 6 oz swiss cheese chopped


  • Preheat oven to 350, spray a 8”x8” square pan with non-stick spray.
  • Place all the asparagus, mushrooms, and swiss cheese in the bottom of the dish.
  • Whisk all the eggs in a bowl with salt and pepper and pour over the ingredients in the baking dish.
  • Bake for 45 minutes.
  • Cut into pieces and serve.
