Preheat oven to 375.
Grease cookie sheets and set aside.
In a mixer, combine butter and sugars until light and fluffy.
Add egg, Tazo latte concentrate, pumpkin and vanilla and mix until combined.
Add the dry ingredients and mix well.
Roll the dough into balls (approx 1 inch) and place on prepared cookie sheets. Leave space between the cookies.
Bake 10-12 minutes or until lightly brown around edges
