Pumpkin Chai Spice Cookie

Ingredients

  • 1/2 cup unsalted butter room temp.
  • 1/4 c granulated sugar
  • 1/4 c light brown sugar
  • 1 egg
  • 2 tsp vanilla
  • 1/4 c Tazo Vanilla Caramel Chai Latte Concentrate
  • 1/4 pumpkin puree
  • 2 cups flour
  • pinch of salt
  • 1/2 tsp baking soda
  • 12 tsp cinnamon

Instructions

  • Preheat oven to 375.
  • Grease cookie sheets and set aside.
  • In a mixer, combine butter and sugars until light and fluffy.
  • Add egg, Tazo latte concentrate, pumpkin and vanilla and mix until combined.
  • Add the dry ingredients and mix well.
  • Roll the dough into balls (approx 1 inch) and place on prepared cookie sheets. Leave space between the cookies.
  • Bake 10-12 minutes or until lightly brown around edges
