Cinnamon Apple Pie Cupcakes

Apple Pie in cupcake form. These cupcakes are so cute and taste like a delicious apple pie but in cupcake form. These were inspired by a recipe from Food Network Magazine.


  • ngredients:

Filling –

  • 1 can of apple pie filling


  • 1 refridgerated pie crust
  • 1 egg beaten
  • Sanding sugar
  • Frosting-
  • Tub vanilla frosting


  • 1 stick butter room temperature
  • ½ cup sugar
  • ½ cup brown sugar
  • 1-1/4 cup flour
  • 1 TBSP cinnamon
  • ¼ tsp nutmeg
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 2 eggs
  • 3 tsp vanilla extract


  • Preheat oven to 350.
  • Line 12 muffin tins with liners and set aside.
  • In an electric mixer fitted with the paddle attachment cream the butters and sugars until light and fluffy.
  • Add the eggs one at a time.
  • Add the vanilla and combine.
  • Add the remaining ingredients and mix until just combined.
  • Divide the batter into the 12 muffin tins.
  • Bake for 15 minutes.
  • Remove from oven, add 1 TBSP apple pie filling to each cupcake.
  • Bake an additional 10 minutes.
  • Cool completely.
  • Pipe each cupcake with frosting and add a prepared pie crust. (see below)


For the mini pie crusts- Roll out the refrigerated pie crust. Slice into ¼” slices – I used a pizza slicer. Create a lattice pattern. Cut out 12 circles (approx.. 2 inches) from the lattice and place on baking sheet with silicon mat. Brush with beaten egg and sprinkle with sanding sugar. Bake 15-17 minutes. *** Take note these are fragile, you want them to be lightly brown.
