What is a Texas Sheet cake?
It is a large cake baked in a sheet pan (13x 18) covered in chocolate frosting with pecans in the frosting. We omitted the nuts in the recipe because we do not like them. (I know, say it ain’t so!) Instead we topped ours with rainbow sprinkles. The nuts are listed in the recipe below in case you like them, if not simply omit like we do.
Ingredients
Cake-
2cupsflour
2cupssugar
1tspsalt
4TBSPcocoa
2sticks butterunsalted
½cupbuttermilk
1cupboiling water
2eggsbeaten
1tspbaking soda
1TBSPvanilla extract
Chocolate Frosting-
4TBSPcocoa powder
3cupspowdered sugar
6TBSPmilk
1 ¾stick butterunsalted
½cupchopped pecansoptional
Instructions
For the cake-
Spray a 13 x18 sheet pan with non-stick spray and preheat oven to 350.
In a saucepan melt the butter and cocoa, stir. Add the water and bring to a boil. Turn off heat.
In a large mixing bowl, combine flour, sugar, salt, and baking soda. Add the chocolate mixture and combine.
Add buttermilk, eggs and vanilla and mix thoroughly making sure all the ingredients are combined.
Pour into prepared sheet pan and bake for 20 minutes.
Cool completely
For the frosting-
Melt better in a small saucepan. Add the cocoa and stir to combine. Turn off heat. Add the milk, sugar and vanilla and mix until smooth. (add pecans here if desirePour over cake and even out the frosting. Top with sprinkles if desired.
Cut into squares and serve.
