Easy Baked Fish in Foil Packets

About a year ago we welcomed our newest addition to our family, Bella. We adopted Bella from an agency that rescues dogs from being abused. Our Bella came from St. Thomas where she was in a pen with hundreds of other dogs. When we adopted Bella she was missing part of one of her ears because she was attacked while living in those miserable conditions.

Bella is part Doberman and hound mix, she is the sweetest most gentle girl you could hope for in a dog. Because of her harsh start we are super careful with our girl and we make sure that is she is eating well. Inspired by Rachael Ray’s kitchen the DISH from Rachael Ray™ Nutrish® dry dog food line treats our dog to flavors and ingredients that my human family already knows and loves.

I have always loved Rachael Ray and watch her many shows on TV, subscribe to her magazine but what made me fall even more in love with her is that she donates her personal proceeds to Rachael’s Rescue, which was created to help shelter pets in need. Because every DISH from Rachael Ray™ Nutrish® recipe is made with whole ingredients you can see, like slow-roasted chicken, carrots, peas, potatoes and apples it inspired me to create a recipe for my human family that also uses fresh quality ingredients.

Easy Fish and Vegetables in a Foil Packet (individual serving)

Ingredients

1 piece Cod or Tilapia

½ red bell pepper, green bell pepper and onion, sliced thinly

Sauce

½ cup low sodium soy sauce

1 teaspoon ground ginger

salt and pepper to taste

Directions

Preheat oven to 350.

Using 1 large sheet of aluminum foil, place the fish and vegetables in the center of the foil.

Mix together the sauce ingredients and pour carefully over the top of the fish.

Salt and pepper to taste.

Carefully take both ends of the foil and roll down 3 times.

Roll in both ends as well so you have a nice, clean packet.

Bake on a cookie sheet for 30 minutes.

Unwrap the foil and plate. **Be careful of the steam when you open the foil packet.
