Back to school season is quickly coming and before we blink we will be saying good-bye to the long days in the sun and replacing them with routines, school and early bedtimes. We are constantly on the go in September with three school-aged children and mom is a teacher too. We are trying to enjoy every last minute of summer vacation!

To ensure a good morning routine once school starts, we set out clothes and backpacks the night before and I usually do baking on the weekends with good wholesome treats that the family can bring for breakfast or have as a snack. These banana crumb muffins are a moist and delicious treat.

We use Horizon® organic milk to drink and Horizon® organic half and half in this recipe. Combine these products with other ingredients for a delicious snack served up with a cold and creamy glass of Horizon organic whole milk.

Our children drink Horizon organic milk with all of their meals and this mom can feel good about what they are drinking. Horizon milk comes from cows that are not given growth hormones or antibiotics and are raised on farms that follow organic practices. I usually have a carton of Horizon® organic half & half on hand because I love the creaminess it adds to my coffee and tea. You can also use Horizon half & half in soups and other recipes too for an added richness in flavor.

Moist Banana Crumb Muffins

 

Ingredients – Muffin

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon salt

3 bananas, mashed

1/3 cup Horizon organic half and half

1/2 cup white sugar

1 egg, lightly beaten

1/3 cup  unsalted butter, melted

Topping

1/3 cup packed brown sugar

2 tablespoons all-purpose flour

1 teaspoon ground cinnamon

1 tablespoon  unsalted butter

 

Directions

Preheat oven to 375 degrees and line muffin pan with liners.

In an electric mixer bowl fitted with a paddle attachment, beat together bananas, sugar, egg, half & half, and melted butter. Add the dry ingredients for just the muffin listed above and mix until moistened. Spoon batter into prepared muffin cups.

In a small bowl, mix topping mixture until crumbly. Sprinkle topping over muffins.

Bake in oven 18 to 20 minutes.

Cool completely.

These Banana crumb muffins are moist and you can use up those ripe bananas that you have in your home! I love the taste of Horizon unsalted butter in this recipe because it gives the baked goods a sweet and creamy taste. We love to use this butter on toast too.
