Banana Snack Cake

Tired of giving the kids the same old snack every day after school? Make this banana snack cake for them and they will love it and with no added sugar you can feel good about making it for them.

Banana Snack Cake

I use semi-sweet chocolate chips in this cake as I like the bite of the chocolate in contrast with the sweet banana cake. I used regular size chocolate chips but you can easily use chunks and mini chips as well. Even white chocolate chips would be a delicious addition.

Banana Snack Cake

Ingredients

3  bananas, mashed

1/3 cup oil

¼ cup milk

2 eggs

1 TBSP cinnamon

2 tsp vanilla extract

½ tsp baking soda

1 tsp salt

1-3/4 cup flour

1 cup chocolate chips

Directions

Preheat oven to 350.

Line a 13×9 pan with aluminum foil, spray with non-stick spray.

In a mixing bowl fitted with the paddle attachment mix the banana, oil, milk, vanilla and eggs until combined.

Add in the cinnamon, baking soda, salt and flour until fully mixed.

Fold in the chocolate chips.

Pour batter into prepared pan and bake for 25-30 minutes.

Cool completely.

Cut into bars.

I really like having this banana snack cake in the house, it is a good for you snack that gives the kids a few more servings of fruit and let’s face it- this mom needs all the help she can get in that department.

What are some of the after-school snacks you make for your kids? Do they snack or do you just give them dinner? Our kids get off the bus at 4:30 so sometimes it is a hard choice. Usually we see how much homework they have and if it is a lot, they have a snack first, then do their homework then dinner. But homework is a whole different topic for another day.
