“On the fifth day of Christmas, my true love gave to me” … Cookies! Lots and lots of cookies! I love baking for Christmas and giving cute gift bags and tins for gifts to the school bus driver, co-workers, teachers, etc. I truly believe that everyone loves a handmade gift. I think it comes from the heart and that a little more effort went into their present, so that it wasn’t just about the present but the sentiment it symbolizes.
Here is a recipe for Butter Spritz Cookies. These cookies use a cookie press to achieve their delicate shapes but they are worth the extra effort for the delicious melt in your mouth cookie. My family has been making these cookies for generations. My nana use to package them up in gift wrapped coffee tins and give to the members of her church along with her banana bread.
I love how cooking and baking can illicit memories immediately.
Butter Spritz Cookies
2 sticks butter, softened
3/4 cup sugar
1 egg
2 teaspoons vanilla extract
½ teaspoon baking powder
½ teaspoon salt
2 1/4 cup flour
Sprinkles, non-perils, etc. for decorating
Directions
Heat oven to 350ºF. Beat butter and sugar in large bowl with electric mixer on medium speed until light and creamy (about 5 minutes) Stir in egg and vanilla extract, add dry ingredients and combine.
Add dough to cookie press and make the shapes that you like. Add your decorations (sprinkles, non perils, etc.)
Bake 8-10 minutes until edges are set, but not brown. **These cookies bake fast!
Cool completely.
