Best Chocolate Chip Coffee Crumb Cake

There is nothing better than a delicious slice of cake with your morning or afternoon coffee. This recipe has just the right amount of sweetness with the chocolate chips added to the mixture. We love a good crumb cake and the more crumb the better I say! This recipe has a THICK layer of crumb. If you do not like a lot of delicious crumb on your cake, halve the crumb ingredients.

 

Chocolate Chip Crumb Cake Recipe

 

Ingredients

crumb topping

1-1/2 stick unsalted butter, room temp.

1 cup flour

½ cup light brown sugar

¼ sugar

1 tsp cinnamon

½ tsp nutmeg

cake

¾ cup sugar

1/s stick unsalted butter, room temp

½ cup milk

1 egg

2 tsp vanilla extract

1-1/2 cup flour

2 tsp baking powder

1 tsp salt

½ mini chocolate chips

Directions

Preheat oven to 350.

Spray a 9×12 baking dish with non-stick spray and set aside.

Prepare the streusel – combine all the ingredients until crumbly- set aside.

To make the cake- Cream the butter and sugar together until light and fluffy (4 minutes)

Add the milk until combined. (it may look weird at this point!)

Add the egg and vanilla extract and mix until smooth.

Add the dry ingredients and combine.

Fold in the chocolate chips.

Pour into prepared pan.

Top with streusel topping

Bake for about 40 minutes or until done.

Cool completely.

 

There are so many chocolate chip crumb cake recipes out there but I think this one s the perfect ration from crumb to cake. Plus using mini chocolate chips allows the chips to suspend in the cake batter and not sink to the bottom.
