Easy Homemade Coconut Macaroons
The flowers are poking through the dirt and a I fresh new look on the world! Its amazing how spring has the affect on me- I feel like I can do anything with a renewed sense of purpose or maybe that’s the coffee talking!
We love using flavored creamers and have a large variety of choice to choose from in our refrigerator. Our top flavors currently are International Delight® HERSHEY’S® Chocolate Caramel, International Delight® REESE’S® Peanut Butter Cup and International Delight® Almond JoyTM. the later of which inspired this easy coconut macaroon recipe. Both varieties we picked up at Walmart.
How to Make Coconut Macaroons
Ingredients
2 egg whites
1 pkg (14 oz ) coconut flakes
1 14 oz can of sweetened condensed milk
¼ cup International Delight® Almond JoyTM Creamer
Directions
Preheat oven to 325. Line baking trays with silicon mats and set aside.
In an electric mixer with the whisk attachment beat egg whites to stiff peaks.
Meanwhile, in another large bowl combine the coconut, milk and creamer to combine.
Fold in the egg whites.
Drop by TBSP onto prepared baking sheets.
Bake for approx. 17 minutes until lightly browned around edges.
Remove immediately from baking sheet to cool.
Optional – dip bottoms into melted chocolate if desired.
These coconut macaroons are easy to make and store well. They are the perfect treat to enjoy with your coffee. Add a drop of International Delight® Almond JoyTM creamer to your coffee and it is just like your favorite candy in a cup. My husband loves the International Delight® REESE’S® Peanut Butter Cup in his daily coffee. Is there a REESE’S® Peanut Butter Cup in your mug? There should be.
