Summer is our favorite time of year here in our home! We love spending all of our time outside. We live in the middle of the woods and have a beautiful pond in our backyard where we spend most of our time with family and friends all summer long. The kids swim, fish, use the paddle boat, play in the sand and so much more!

We are making memories with our children every day we are there. The best part is their grandparents are usually there with us and I love that! I think the kids think the snacks are the best part though and I must say I do pack a mean snack bag and make some delicious treats for these days by the pond.

We always have something for everyone whether it be Snyder’s of Hanover® Pretzels, Cape Cod® Potato Chips or baked homemade goodies there is always something for everyone’s summer snack cravings. We have recently discovered the awesome combo of salty and sweet together in a cookie bar and they are so good! Really- you need to try this recipe for Potato and Chocolate Chip Cookie Bars, they are moist and chewy and the Cape Cod® Potato Chips make the perfect salt companion to these bars.

Potato and Chocolate Chip Cookie Bars

INGREDIENTS

1 cup unsalted butter, room temperature

1 cup brown sugar

¼ cup sugar

2 tsp. vanilla

2 eggs

3 cups flour

1 tsp salt

1 tsp baking soda

1 pkg chocolate chips  ( I used mini chocolate chips)

1-1/2 cups crushed Cape Cod® Potato Chips

 

DIRECTIONS

Preheat oven to 350.

Grease a 13×9 inch baking dish.

In an electric mixer, cream the butter and sugars together until light and fluffy (4 minutes)

Add eggs and vanilla and combine.

Stir in flour, salt and baking soda.

Add chocolate chips and potato chips

Spread into prepared dish and bake for 20-22 minutes.

These cookie bars are so good and they are one of our favorite snacking treats for the summer.
