Pumpkin Chai Spice Cookie
- 1/2 cup unsalted butter (room temp.)
- 1/4 c granulated sugar
- 1/4 c light brown sugar
- 1 egg
- 2 tsp vanilla
- 1/4 c Tazo Vanilla Caramel Chai Latte Concentrate
- 1/4 pumpkin puree
- 2 cups flour
- pinch of salt
- 1/2 tsp baking soda
- 12 tsp cinnamon
- Preheat oven to 375.
- Grease cookie sheets and set aside.
- In a mixer, combine butter and sugars until light and fluffy.
- Add egg, Tazo latte concentrate, pumpkin and vanilla and mix until combined.
- Add the dry ingredients and mix well.
- Roll the dough into balls (approx 1 inch) and place on prepared cookie sheets. Leave space between the cookies.
- Bake 10-12 minutes or until lightly brown around edges
