Crust Less Quiche with Nellie’s Free Range Eggs

I have started a low carbohydrate meal plan this past week and I love to prep as many meals as I can in advance. This crust less quiche is the perfect option of a low-carb lunch. Serve with a side salad or a soup for a complete meal.

Ingredients

 

12 Nellie’s Free Range Eggs

2 lbs asparagus, chopped

6-9 mushrooms, chopped

6 oz swiss cheese, chopped

 

Directions

 

Preheat oven to 350, spray a 8”x8” square pan with non-stick spray.

Place all the asparagus, mushrooms, and swiss cheese in the bottom of the dish.

Whisk all the eggs in a bowl with salt and pepper and pour over the ingredients in the baking dish.

Bake for 45 minutes.

Cut into pieces and serve.

  • 12 Nellie’s Free Range Eggs
