Cute Cinnamon Apple Pie Cupcakes
Apple Pie in cupcake form. These cupcakes are so cute and taste like a delicious apple pie but in cupcake form. These were inspired by a recipe from Food Network Magazine.
Cinnamon Apple Pie Cupcakes
Apple pie filling can be purchased in a can or jar in your favorite retailer. Using prepared foods can give you a little bit of help. We actually make apple pie filling during the fall months and freeze.
Cinnamon Apple Pie Cupcakes
Ingredients:
Filling –
1 can of apple pie filling
Crust-
1 refrigerated pie crust
1 egg, beaten
Sanding sugar
Frosting-
Tub vanilla frosting
Cupcakes-
1 stick butter, room temperature
½ cup sugar
½ cup brown sugar
1-1/4 cup flour
1 TBSP cinnamon
¼ tsp nutmeg
½ tsp baking soda
½ tsp baking powder
2 eggs
3 tsp vanilla extract
Directions:
Preheat oven to 350.
Line 12 muffin tins with liners and set aside.
In an electric mixer fitted with the paddle attachment cream the butters and sugars until light and fluffy.
Add the eggs one at a time.
Add the vanilla and combine.
Add the remaining ingredients and mix until just combined.
Divide the batter into the 12 muffin tins.
Bake for 15 minutes.
Remove from oven, add 1 TBSP apple pie filling to each cupcake.
Bake an additional 10 minutes.
Cool completely.
Pipe each cupcake with frosting and add a prepared pie crust. (see below)
For the mini pie crusts-
Roll out the refrigerated pie crust.
Slice into ¼” slices – I used a pizza slicer.
Create a lattice pattern.
Cut out 12 circles (approx.. 2 inches) from the lattice and place on baking sheet with silicon mat.
Brush with beaten egg and sprinkle with sanding sugar.
Bake 15-17 minutes. *** Take note these are fragile, you want them to be lightly brown.
