Dream Big Princess – Your Dreams Can Come True

“Mama what are we baking today?” This is what I hear every morning, no matter if it is a school day or a weekend. My daughter loves to bake! She will be 4 soon (where did the time go?) and we have been cooking together since she was 2-1/2. Now she pulls up her chair next to the counter and helps make recipes. She knows how to measure and count, use the mixer, place cupcake liners in pans and so much more. I think one day she will be the next best chef! I am so extremely proud of her.

One of her favorite Disney movies is “The Princess and the Frog” she loves to watch Princess Tiana cook- whether it is her papa’s gumbo recipe or a delicious beignet, she always asks what are we making. I hope that my daughter will gain Princess Tiana’s perseverance and work ethic. She shows that with dedication and hard work you can make your dreams come true. My greatest wish for my daughter is to dream big and reach for her dreams.

My daughter is such an inspiration to me, even at an early age. She is an energetic and creative young lady. I know she will do great things one day because she is already reaching milestones on a daily basis. We wanted to share one of our favorite recipes inspired by Princess Tiana. A light and easy Éclair recipe that is inspired by Southern beignets!

Easy Éclair Recipe

 

Ingredients

For the eclair:

1 stick unsalted butter

1 cup water

1/4 tsp salt

1 cup flour

4 eggs

1 tsp vanilla extract

For the filling:

1 pkg. Instant Vanilla pudding

2-1/2 cups milk

1/4 cup confectioners’ sugar

2 tsp vanilla extract

1 cup whipping cream

Topping

8 oz chocolate chips

 

Directions

Preheat oven to 400 degrees.

Line 2 baking sheets with parchment paper.

In a large saucepan, bring the water, salt and butter to a boil.

Add the flour all at once and stir to combine until a ball forms.

Remove from heat and let stand 8 minutes.

Add vanilla and eggs one at a time until each is combined and the dough is smooth and shiny.

Put dough into a self seal bag and cut the corner off.

“Pipe” dough onto prepared sheets approx. 1″x 4″.

Bake for approx. 30 minutes and immediately transfer to wire rack and cool completely.

Filling

In an electric mixer with the wire attachment, beat whipping cream until peaks form. Add sugar and vanilla to combine.

In a separate bowl prepare pudding according to the box directions.

Fold into the whip cream mixture.

Place in refrigerator to chill for 15 minutes.

Cut eclairs open with a serrated knife.

Spoon cream mixture onto the bottom and place the top on.

Melt the chocolate chips in the microwave for approximately 1 minute, stir until creamy and then spread on each eclair.

Chill until ready to serve.

This is a message I can strongly stand behind because I tell my daughter every day how proud I am of her and that she can be whatever she wants to. I love that the Disney Princesses provide an outlet for every little girl no matter what her dream may be. Some of my favorite toys are the Disney princess toys are the Disney Princess Royal Shimmer Dolls. These dolls are the perfect size for little hands. These beautiful shimmery dolls are available in 11 princesses: Jasmine, Ariel, Rapunzel, Cinderella, Pocahontas, Mulan, Tiana, Belle, Aurora, Merida and Snow White. Each Disney Princess Royal Shimmer Doll has removable shoes, an ombre and glittery gown in her signature color and movie-inspired features. They are so sweet and sparkly and honestly what little girl does not like a little sparkle? Everything is better with glitter, right?!

Toys “R” Us also has Little Kingdom Ariel’s Sea Castle in its stores. This fun play set is compatible with all the other items in the Little Kingdom line. The Ariel doll is 3 inches tall and can sit or stand or slide, swing, and strap into the seaweed harness. How much fun! It even comes with 5 Snap-ins to mix and match with storage available for them too. My daughter had so much fun playing with this set. Absolutely adorable!

We had so much fun looking at all the inspirational toys at Toys “R” Us this past weekend. The “Dream Big, Princess” campaign is a beautiful campaign with a strong message. I know that my daughter will one day achieve all of her dreams and goals whether it is that she is going to be a chef, ballet dancer, or veterinarian. I know that I will be with her every step of the way and I can’t wait to see how she will continue to inspire me along the way.
