Easy Apple Crumb Cake

This delicious and easy apple crumb cake is perfect for all your summer get togethers or really any time of the year. We like to serve ours with some ice cream or whipped cream and the apple cake can be warm or cold. This cake would be perfect for a potluck or barbecue and you can also use fresh apples as well. I cheated a bit and used the canned stuff!

This apple cake would also be good during the fall with a nice hot cup of tea or coffee. Yum!

Easy Apple Crumb Cake

Ingredients

4 cups flour, divided

1-1/2 cup unsalted butter divided- room temperature

1/3 c sugar

1 TBSP vanilla extract

1

egg

2 cans apple pie filling

1 tsp cinnamon

½ cup brown sugar

Directions

 

Spray a 9×13 cake pan with non-stick spray, set aside.

Preheat oven to 350.

In an electric mixer with the paddle attachment, cream 1-1/2 stick butter and sugar.

Add in the vanilla and egg.

Add 2 cups flour until combined.

Spread the dough into in the baking dish. I use my fingers for this part.

Spread the apple pie filling over the crust layer. Set aside.

In a separate bowl, combine the remaining 1-1/2 sticks butter, ½ cup brown sugar, cinnamon and 2 cups of flour until crumbly.

Spread the crumbs on top of the apple layer.

Bake for 45 minutes.

Cool completely before serving.

 

That is it- so easy and delicious. If you want a thicker cake than you can make it in a 8” square pan. You will need to adjust your cooking time and add 20 minutes to the baking time. It really just depends on which kind of cake you prefer. My husband likes a bit of a thicker cake while I prefer it to be thin. One thing that we can agree on is that it must have a good scoop of vanilla ice cream- perfection.
