I always love to find new side dishes for my family to enjoy. These easy to make Armadillo Potatoes Recipe are delicious and look so cool. You can add whatever types of herbs you want to these to go with any type of meat you are serving.

How to make Armadillo Potatoes

Ingredients 

5 potatoes
1 TBSP garlic powder
3/4 cup mozzarella cheese
1/2 cup pre-cooked bacon
Directions
  1. Preheat oven to 425 degrees.
  2. Wash 5 potatoes and dry.
  3. Make thin slices in each potato. Do not cut all the way through.
  4. Place in a baking dish and drizzle with olive oil.
  5. Season with salt, pepper and garlic.
  6. Place some crumbled pre-cooked bacon in the slices of potato.
  7. Sprinkle with mozzarella cheese.
  8. Cover with aluminum foil and bake for 45 minutes.

 

Simple as that you have a great potato side dish. Sometimes when you are cooking potatoes for a weeknight meal it can get boring. This is a great way to spice it up a bit. My husband loves how crispy the outside of the potato becomes with a nice and soft inside.
