Easy Holiday Gatherings with this Chicken Fajita Casserole Recipe

This easy chicken fajita casserole is a family favorite made with RO*TEL®. I love cooking with RO*TEL® because it provides an easy way to add a little zest to all of our dishes and RO*TEL is known for delivering bold, adventurous flavor – perfect for our family.

Zesty Chicken Fajita Casserole

 

Ingredients

2 cans  RO*TEL® Original Diced Tomatoes and Green Chilies

1 pkg fajita seasoning mix

2 cups shredded chicken

10 corn tortillas, cut in quarters

1 bag frozen peppers and onions, thawed and drained

2 cups Monterey Jack Cheese

Instructions

Preheat oven to 375.

Drain the RO*TEL® and mix with seasoning, peppers and onions.

In an 8 qt casserole dish, place about 10 pieces of tortillas on the bottom.

Add a layer of ¼ of the RO*TEL® mix.

Layer ¼ of the  chicken.

Then ¼ of the cheese.

Repeat starting with the tortillas.

You should have 4 layers.

Place an additional row of tortillas on the top and sprinkle with cheese if desired.

Cover with foil and bake for 30 minutes.

Uncover and bake for an additional 15 minutes.

Remove from oven and let stand for 5 minutes before serving.
