Olive oil, get ready to learn about this product. Cooking with olive oil is a huge part of our household. Growing up with Italian grandparents, the flow of olive oil has always run well in our home.

European Extra Virgin Olive Oil

 

Extra virgin olive oil is made by pressing without heat or chemicals. It represents the freshest and purest olive oil available that is virtually free of acidity. If the oil doesn’t have the signature fruity taste and harmonious balance, it won’t receive an Extra Virgin rating.

You can do everything from a light sauté to a deep fry and even bake. I  love to bake with European Extra Virgin Olive Oil as well. We re-created this Olive Oil, Poppy Seed and Lime Cookies in our home and the results were amazing. We used the EVOO brand Olitalia in our cookie bites and the flavor was amazing!

 

 

Olive Oil, Poppy Seed and Lime Cookies

 

Ingredients

2 cups flour

½ tsp baking soda

½ cup powdered almonds

½ tsp baking powder

Zest of 1 lime

½ tsp salt

1 cup brown sugar

3 TBSP poppy seeds

1/3 cup fruity European Extra Virgin Olive Oil

2 eggs

½ tsp vanilla extract

Directions

 

Preheat oven to 350.

In a large bowl combine the olive oil, poppy seeds and sugar together until well combined.

Add the eggs and vanilla and mix together.

Add the dry ingredients until just incorporated.

Scoop dough into balls and arrange on a non-stick mat on a baking sheet.

Bake for 11 – 13 minutes, tops will puff and crack.

Best eaten on the same day they are made.
