Fluffernutter Bars with Marshmallow Cream Icing
Fluffernutters are a recipe with peanut butter and marshmallow fluff. I swoon for this delicious fluffernutter bar. I mean what could be better than peanut butter and marshmallows!
How do you make Fluffernutter Bars?
Making these Fluffernutter bars is really easy. The peanut butter bar is soft, chewy and dense and the marshmallow icing is sweet and creamy. Personally, I like anything that has peanut butter included but these cookie bars are a great treat all year long.
Fluffernutter Bars
Ingredients:
For bars-
¾ cup unsalted butter, melted
1 cup brown sugar
½ cup sugar
2 eggs
1 TBSP vanilla extract
¾ cup creamy peanut butter
1 tsp salt
1-1/2 cups flour
½ cup peanut butter chips
For icing –
½ cup unsalted butter, room temp.
1 cup marshmallow fluff
2 cups powdered sugar
Directions:
Grease and line a 9” x 13″ casserole pan and set aside.
In an electric mixer with the paddle attachment combine the sugars and butter.
Add the eggs, vanilla and salt and mix. Be sure to scrape down the sides of the bowl as you go.
Add the peanut butter and incorporate.
Add the flour until just combined.
Fold in the peanut butter chips.
Spread into the prepared pan and bake for approximately 30 minutes. **Do not over bake or the bars will be dry.
Cool completely before frosting.
Make the frosting – Blend together all the ingredients for the marshmallow icing in an electric mixer.
Spread evenly on the peanut butter cookie bars.
Cut into pieces.
Can you freeze Fluffernutter Cookie Bars?
Yes! Which makes this dessert even better in my opinion. I like to cut mine into squares and freeze in a zip top freezer bags. Be sure to do this WITHOUT the icing.
