There is nothing better than ice cream on a hot summer day…. well maybe if you add some cookies to it! We had some left over mint chocolate chip cookies and I decided to make ice cream cookie sandwiches with the leftover cookies. These are super easy to make.
Simply add a scoop of ice cream between two cookies. Roll the edges in sprinkles and place in the freezer to harden. Super cute and a delicious frozen treat.
