Need a recipe for all of the extra zucchini your garden is producing? These zucchini vegetable fritters are a delicious and healthy option. We made ours in the air fryer so they are extra light, but you could fry them as well.
Air Fryer Vegetable Fritters
We made our vegetable fritters with zucchini and carrots but you could use any vegetables that you have on hand. Cauliflower and broccoli would also work just steam them first and chop into small pieces.
Homemade Zucchini Vegetable Fritters
Ingredients
2 zucchini, shredded
3 carrots, shredded
¼ cup flour
1 egg
1 tsp salt
½ tsp paprika
½ tsp adobe seasoning
Directions
Add 1 tsp of salt to the shredded zucchini and carrots and let sit for about 10 minutes.
Squeeze out all the extra water from the vegetables. You want the vegetables to be as dry as possible.
Mix the remaining ingredients into the vegetables.
Form mixture into small patties and place in the air fryer.
Air fry for about 10-15 minutes (time will vary depending on the size of the fritters.)
Serve.
This recipe is perfect for using up leftover vegetables or ones that you have growing in abundance in your garden. We serve ours with Greek yogurt.
