Last week when we went out for dinner they served a delicious lasagna soup. We enjoyed it so much that I decided to recreate this soup but in a healthier, lighter form.

Light Lasagna Soup Recipe

We love to eat soup during the fall and winter months. Every year I am always looking to find or create new recipes and this light lasagna soup recipe is exactly what you need this fall.

Instead of using sausage and beef in this soup, I used 99% fat free ground chicken and ground turkey, as well as skim ricotta cheese. This recipe is like the best part of the lasagna, the extra bits in the bottom of the pan.

  1. In a slow cooker, combine all ingredients except ricotta cheese.
  2. Cook on high for 3 hours.
  3. Serve with a dollop of ricotta cheese

The cold ricotta cheese with the hot soup. Is exactly what this soup needs, so be sure not to skimp on this step. My husband and I really enjoyed this soup and it will definitely be on our must make list every month.

  • 1 pkg ground chicken (99% fat free)
  • 1 pkg ground turkey (99% fat free)
  • 1 24 oz can tomato sauce (no sugar added)
  • 36 oz chicken broth
  • ½ pkg lasagna noodles (broken)
  • ½ teaspoon crushed red pepper flakes
  • 1 tsp Italian seasoning blend
  • 1 small container part-skim ricotta cheese for garnish
  1. In a slow cooker, combine all ingredients except ricotta cheese.
  2. Cook on high for 3 hours.
  3. Serve with a dollop of ricotta cheese
