Sugar Cookie Recipe

 

 

Ingredients- Cookies

 

2 sticks unsalted butter, room temperature

1 cup sugar

2 eggs and 3 egg yolks

2 tsp vanilla extract

1 tsp almond extract

1-1/2 tsp baking powder

1 teaspoon salt

3-1/2 cups flour

 

Ingredients- frosting

1 stick unsalted butter, room temperature

½ cup shortening

4 cups confectioner’s sugar

1 tsp vanilla extract

1 tsp almond extract

2-3 TBSP milk

Sprinkles

Food coloring, if desired

Instructions

Cookies-

In an electric mixer fitted with the paddle attachment cream the butter and sugar until light and fluffy (3 minutes)

Add the eggs and yolks one at a time until combined.

Mix in the extracts, salt and baking powder until combined.

Slowly add in the flour until incorporated.

Form into a large disk, wrap in plastic wrap and chill for at least 3 hours.

Preheat oven to 375, line baking sheets with silicon mats.

Roll out the refrigerated dough to 1/4 inch thick. Cut into desired shapes.

Place 1-inch apart on baking sheet.

Bake until lightly golden – 10-12 minutes.

Let cool completely before frosting. 

For the frosting-

In a large bowl blend all the ingredients until the desired consistency. Place into piping bag for frosting.

 

These really are the most delicious cookies that my kids beg for me to make. They are sweet, moist and chewy and they look AMAZING!!! Really the presentation is spectacular. They are the perfect cookie to bring to a class party or bake sale- trust me simply put in a large cellophane bag and tie with a ribbon and tag- perfection.
