Low Carb Egg Cups with Pete and Gerry’s Organic Eggs

The low carb egg cups are the perfect way to celebrate National Egg Month this May. These are easy to grab and go for breakfast and lunch. We used Pete and Gerry’s Organic Eggs in this recipe and boy are we impressed.

The low carb egg cups really pack a protein punch. This recipe can be made ahead of time (meal prep) and then popped into the microwave for 30-45 seconds for an easy to grab, on the go breakfast. A little planning can go a long way in making your week streamlined.

Low Carb Egg Cups with Ham

Makes 12 cups

 

Ingredients

Non-stick spray

12 pieces of thin-sliced deli ham

6 Pete and Gerry’s Organic Eggs

1 cup cherry tomatoes, cut or chopped

Salt and pepper to taste

 

 

Directions

 

Preheat oven to 350 and spray a muffin pan with non-stick spray.

Place a single piece of ham in each cup and press down in the center of each so a cup shape forms.

Add a few tomatoes to each ham cup.

In a separate bowl beat the eggs and season with salt and pepper to taste.

Add a few tablespoons of the eggs into each cup – Be careful not to over fill!

Bake for 20-25 minutes.

Let cool for 5 minutes.

Use a fork to remove the egg cups from the tin.

 

*** You can easily add other mix-ins into your egg cups. Mushrooms, peppers, onions, asparagus would all work well as wood cheese.

This recipe would also work for a brunch or shower event as well because they can be made ahead of time. My kids love that the cups are also edible! A real protein packed meal that I can feel good for giving them.
