We love anything that has mint in it in our home from ice cream to cookies and more. We made this mint chocolate chip cake and boy was it good- moist and soft. With just a hint of mint goodness. I made this cake in a loaf pan but you can easily make it in a small round cake pan. If you wanted to make it in a 13×9 cake pan you would need to double the recipe and adjust the baking time.
Mint Chocolate Chip Cake
INGREDIENTS
1/2 cup unsalted butter, softened
4 oz. cream cheese, softened
3/4 sugar
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon mint extract
1 cup flour
1 teaspoon baking powder
1/4 salt
1 cup milk chocolate chips
DIRECTIONS
- Preheat oven to 325. Spray a 9″ loaf pan with cooking spray.
- Combine all ingredients in an electric mixer fitted with the paddle attachment for 3-4 minutes. Add the chips last.
- Pour into prepared pan.
- Bake for 45-55 minutes.
- Cool completely.
