Mint Chocolate Chip Cake

We love anything that has mint in it in our home from ice cream to cookies and more. We made this mint chocolate chip cake and boy was it good- moist and soft. With just a hint of mint goodness. I made this cake in a loaf pan but you can easily make it in a small round cake pan. If you wanted to make it in a 13×9 cake pan you would need to double the recipe and adjust the baking time.

Mint Chocolate Chip Cake

INGREDIENTS

1/2 cup unsalted butter, softened

4 oz. cream cheese, softened

3/4 sugar

2 eggs

1 teaspoon vanilla extract

1/2 teaspoon mint extract

1 cup flour

1 teaspoon baking powder

1/4 salt

1 cup milk chocolate chips

DIRECTIONS

  1. Preheat oven to 325. Spray a 9″ loaf pan with cooking spray.
  2. Combine all ingredients in an electric mixer fitted with the paddle attachment for 3-4 minutes. Add the chips last.
  3. Pour into prepared pan.
  4. Bake for 45-55 minutes.
  5. Cool completely.
