Mini Mocha Almond Bundt Cakes with Pillsbury Filled Pastry Bag Chocolate Fudge

My baby boy is turning sixteen. Boy, where did time go? It seems like just yesterday he was crawling and drooling and now he is ready for his Driver’s Permit and getting a car. Of course we have to celebrate with cake and candles, but boy is this time of the year hectic and time is really stretched out. When I was doing my food shopping this week at ShopRite, they had these NEW PillsburyTM Filled Pastry Bags in three delicious flavors: vanilla, cream cheese and chocolate fudge and I knew they would be perfect for these small cakes.

I love making individual cakes or cupcakes when we are having people over because I think there is something special about serving individual cakes with beautiful frosting to each and every person. These awesome pre-filled pastry bags make it so easy to decorate these small bundt cakes with the built-in star tip. Create three beautiful designs: stars, rosettes and waves easily and without the mess. How beautiful did they turn out?

 

Mini Mocha Almond Bundt Cakes

 

Ingredients

1 pkg vanilla cake mix

1 cup cold strong brewed coffee

3 eggs

½ cup oil

2 teaspoon almond extract

¼ unsweetened cocoa powder

PillsburyTM Filled Pastry Bags, chocolate fudge

Directions

For cakes-

Preheat oven to 350 and spray each mini bundt cake pan with non-stick spray.

In a large bowl, combine all ingredients except the frosting and combine for 50-100 strokes.

Pour batter into each cake well.

Bake for 30 minutes.

Cool completely.

To frost-

Pushing the frosting towards the star tip and twist the top of the pastry bag.

Remove the plastic from the star tip by ripping at the perforation.

Squeeze from the top of the pastry bag to frost- I like make continuing circles so there is a good amount of frosting for each cake.

Top with sprinkles if desired.
