We love rocky road ice cream so we thought we would create a cookie that would incorporate all of the items like almonds, chocolate and marshmallow. These Rocky Road Cookies are an easy way to make all of your treats into a cookie.
Rocky Road Cookie Recipe
These are a delicious chocolate cookie that has chocolate chips and almonds in the batter. The marshmallow fluff adds a decadent toasted marshmallow drip over the top of each cookie. Be careful with the marshmallow fluff, it can definitely get away from you if you use too much.
Rocky Road Cookies
Ingredients
1-1/2 cup flour
¼ cup cocoa powder
½ tsp baking soda
1 tsp baking powder
1 tsp cornstarch
1 tsp salt
1 stick unsalted butter, room temperature
½ cup sugar
½ cup brown sugar
1 egg
1 tsp almond extract
¼ cup sliced almonds
¼ cup chocolate chips
About 4 oz marshmallow fluff
Directions
In an electric mixer fitted with the paddle attachment cream the butter and sugars together until light and fluffy.
Add the egg and extract and combine.
Add in the remaining ingredients except the marshmallow fluff until combine.
Refrigerate at least overnight.
Preheat oven to 350.
Prepare baking sheets with silicon mats.
Roll the dough into balls and use a glass to press down a little on the baking sheets.
Put a teaspoon of marshmallow fluff on top of each cookie.
Bake for 12 minutes.
Let cool on the cookie sheets for 10 minutes.
