Sailmates: Cruise-Inspired Spiced Zucchini Bundt Cake Recipe

Nothing makes me feel better than getting my groove on in the kitchen. Cooking up sweet treats like this Spiced Zucchini Bundt Cake to make me feel grounded. I am looking forward to heading out on the Girls Getaway Cruise in a few months and this recipe was inspired by the chefs on Holland America Line.

I love listening to music while baking – do you have a playlist that you listen to while doing activities. Baking is definitely my zen moments. I have been thinking a lot lately about the things that make me happy. Spending quality time in my kitchen especially with my best helper are my favorite moments.

 

As I mentioned, I am looking forward to cruising with Holland America this January with O, Oprah the Magazine for the Girls’ Getaway Weekend. One of the things that I am excited to enjoy is the food prepared by Holland America Line Culinary Council®.

Elizabeth Faulkner, a frequent judge and competitor on Food Network and her San Francisco bake shop, Citizen Cake. Chef Elizabeth is an inspiration for all the women that want to be chefs or entrepreneurs.

One of my favorite things to do is bake with items picked fresh from my garden. Zucchini has been abundant this year and this moist spiced zucchini bundt cake is the perfect fall staple.

Zucchini Spice Bundt Cake

 

Ingredients

 

Directions

 

  1. Spray a bundt pan with non-stick cooking spray.
  2. Preheat oven to 350.
  3. In an electric mixer fitted with a paddle attachment combine all the ingredients except the zucchini until combined.
  4. Fold in the zucchini.
  5. Pour into the prepared pan and bake for about 1 hour or until a toothpick comes out clean.
  6. Cool completely.

 

 

This cake is delicious on its own over topped with a sprinkle of powdered sugar. I am looking forward to seeing all of the culinary confections on board the Girls’ Getaway Cruise this January. Spiced Zucchini Bundt Cake

  • 2 cups shredded zucchini (excess water drained)
  • ¾ cup coconut oil
  • ¼ cup skim milk
  • 2 tsp vanilla extract
  • 3 eggs (room temperature)
  • 2-3/4 cup whole wheat flour (or almond flour)
  • 1-1/2 tsp baking soda
  • 1 tsp salt
  • 1 TBSP cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground ginger
  • 1 cup sugar
