S’mores Blondie Bars

Our family loves to makes s’mores at any time during the day or night and for any season. Lately I have been experimenting with some new recipes that incorporate the ingredients of a classic s’more. Chocolate, marshmallow and graham cracker. It really is a winning combination.

These blondie type bars are rich and chewy and have the perfect flavor of the classic s’more. So good!

 

S’mores Blondie Bars

 

Ingredients

1 stick unsalted butter

1 cup flour

2 teaspoon baking powder

1 teaspoon salt

1 cup light brown sugar

1 Tbsp vanilla extract

2 teaspoon cinnamon

2 large eggs

1 sleeve graham crackers, broken in small pieces

1 cup mini marshmallows

1 cup chocolate chip, any variety

 

Directions

 

Preheat oven 350. Spray a 9×13 baking dish with non stick spray and set aside.

In a medium bowl combine flour, baking powder and salt.

In another medium bowl, melt the butter in the microwave for 30 seconds. Add the brown sugar, vanilla, cinnamon and eggs.

Combine the wet ingredients with the dry ingredients and mix well.

Spread into prepared pan and bake for 20 minutes.

Sprinkle with graham crackers, marshmallows and chocolate chips for 8 minutes.

Remove from heat and cool completely before cutting into squares.

Makes 24 bars.

That’s it- they will keep in an airtight for 5 days (if they last that long!) We keep ours at room temperature but I know a few people that like to keep theirs in the refrigerator so that they last a bit longer. It really is a matter of preference. If you want a thick bottom, double the recipe and spread in the same pan. You will need to adjust the cooking time for an additional 40 minutes. Give these s’mores blondie recipe a try today.
