I love baking and creating new recipes and I have come up with a delicious and nutritious recipe for Strawberry and Coconut mini muffins. I love having a fresh snack after school for not only me but my children as well. They are coming home after a really long day of school and bus rides and I want to have something home made to give them.

These muffins have a surprise ingredient incorporated into the recipe – Carnation Breakfast Essentials in vanilla We have been a long time favorite of Carnation Breakfast Essentials because it really helps this full time working mom of 3 with getting breakfast streamlined.

 

You can make so many recipes with Carnation Breakfast Essentials like smoothies and smoothie bowls are add to a favorite recipe (pancakes, waffles, etc) for a nutritional boost. I created these mini muffins from the strawberry flavor but they are also available in chocolate and vanilla. (My favorite for smoothies!)

Strawberry Coconut Mini Muffin Recipe

Ingredients

3 Tbsp melted coconut oil

2 tsp vanilla

2 Pkgs Vanilla Carnation Breakfast Essentials

2 tsp. Baking powder

½ tsp. salt

1 egg

1 cup lowfat plain greek yogurt

1-1/2 cup flour

1 c. diced strawberries

¼ c. coconut flakes

 

Directions

Preheat oven to 350.

Spray a small muffin pan with non-stick spray.

In one bowl, combine all dry ingredients.

In a separate bowl, combine all wet ingredients.

Fold the wet ingredients into the dry ingredients.

Spoon the batter into the prepared muffin tin.

Bake 10-12 minutes.

Cool completely before removing the muffins from the pan.

**Store in refrigerator or freeze for longer storage.

  • 1 c. diced strawberries
  • ¼ c. coconut flakes

  3. In one bowl, combine all dry ingredients.
  4. In a separate bowl, combine all wet ingredients.
  5. Fold the wet ingredients into the dry ingredients.
  6. Spoon the batter into the prepared muffin tin.
  7. Bake 10-12 minutes.
  8. Cool completely before removing the muffins from the pan.
  9. **Store in refrigerator or freeze for longer storage.

 

I love that I can sneak nutritious elements into these cupcakes with fresh fruit and Carnation Breakfast Essentials. They are a moist and delicious option for anytime of the day.
