The Best White Chicken Chili Recipe

white chicken chili recipe | chili without tomatoes

White Chicken chili is the ultimate game day food. This recipe can be made in a crockpot or stovetop and it always is delicious and comforting.

White Chicken Chili

My favorite kind of chili is a white chicken chili. It is hearty yet a bit lighter than your average red base chili. You should definitely try this recipe. I love to serve this chili with cornbread. It is the perfect accompaniment for this recipe.

I usually make this recipe in a slow cooker. I combine all the ingredients into the crockpot first thing on a Sunday morning and set temperature to low. By kick-off at 4 pm, this chili is perfectly cooked and ready to watch a game with you.

Directions

  1. In a large pot, sauté onions until translucent.
  2. Add the ground chicken and sausage and brown.
  3. Add the peppers and sweat until tender.
  4. Add the remaining ingredients and 2 cups of water.
  5. Simmer for 2-3 hours, covered.

Sometimes when I have regular chili, I feel so full or even have indigestion. I think it has something to do with the acidity of the tomatoes in the dish. This recipe without a tomato base fills us up, but without the extra fat and acidity. Try it today.

If we are going tailgating or to a football viewing party we usually bring this with us. It is great to transport in the slow cooker and the cornbread travels well too. How awesome is this brownie pan from Pampered Chef? It makes the perfect cornbread squares to top the delicious chili.

Happy Cooking!
