Girl Scout Season =Too many cookies! Haha!
Really my husband and I every year at this time buy boxes and boxes of Girl Scout cookies. How can you say no to a cute little girl selling cookies? I decided this year that having 6 boxes of Thin mint cookies in the cabinet was a bit much. So what to do with all those cookies? Make cheesecake of course!
I do not own a springform pan so anytime I make cheesecake, I usually make it the no-bake way. This is a recipe that is easy to do!
Ingredients
2 pkgs cream cheese, 8 oz, softened
1/3 c. Sugar
1 box of Thin Mints Girl Scout cookies
1/2 tub cool whip
Directions
1. Beat cream cheese and sugar in a mixer until well blended. Add in 1/2 tub cool whip and combine.
2. Drop a thin mint cookie into the bottom of a muffin liner in a muffin tin.
3. Add cheesecake mixture.
4. Refrigerate for 3 hours.
5. Top with a half of cookie.
