I made a Tomato Panzanella Salad to pair with our Smithfield All Natural Pork Chops. Super simple. I prepare the salad before putting the pork chops on the grill because the salad tastes better if it has 15 minutes to marry the flavors in the refrigerator. Plus it takes less than 30 minutes to prepare and cook this meal! Now that’s what I am talking about.
Tomato Panzanella Salad
Ingredients
½ loaf of day old Italian bread, cut into bite size cubes
5 Campari Tomatoes, cut into quarters
1 small ball of fresh mozzarella, cubed into bite size pieces
¼ cup balsamic vinegar
½ EVOO
Handful of basil, julienned
salt and pepper to taste
Directions
Combine all ingredients in a large bowl and mix well.
Refrigerate for 15 minutes
While the salad is chilling in the refrigerator, salt and pepper your Smithfield All Natural Pork Chops and place them on a hot grill. Cook approximately 10 minutes per side. Always check your meat with a thermometer to ensure even cooking.
