Nothing says summer to me than Pineapple and Coconut! Reminiscent of a Piña Colada on a hot summer day. this bread definitely gives you that same feeling. Yum! Drizzle with melted Cream Cheese frosting like I did for a purely decadent treat.
Ingredients
1/2 c butter, softened
1 c sugar
2 eggs
2 ripe bananas, mashed
1/3 c chopped pineapple
1/2c shredded coconut
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Directions
1- Pre heat oven to 350.
2- Grease a loaf pan.
3- Cream butter and sugar until light and fluffy. Beat in eggs, one at a time.
4- Stir in banana, coconut, and pineapple.
5- Combine dry ingredients and add to creamed mixture until moistened.
6- Pour into loaf pan.
7- Bake for 70 minutes or until bread tests done.
8- Cool in pan.
