Unicorn Birthday Cake

My daughter loves unicorns. Anything to do with unicorns really- rainbows, their horns, etc. So it was no surprise that she wanted a unicorn themed birthday this year. I made some cupcakes for her for school.

Easy Unicorn Birthday Cake

I bought these ready made cupcakes from the store because I am recovering from back surgery and just could not bake. For the ears, I cut a marshmallow in half and pressed it into a sprinkle. For each horn I pulled a piece of fondant so that it looked like a horn and left them out overnight to dry and get hard. Then I simply arranged all the pieces and topped with sprinkles, it was a really easy way to make them. I had made something similar using Target ingredients that was featured on Target Made Me Do It – you can read all about it here.

For her unicorn cake, I made a five layer rainbow cake that I had made previously and froze because I knew that I was not going to be up for baking. I covered the cake in fondant (not really my strong suit) and then piped in some icing for the mane, and eyes. I rolled a tube of fondant around a skewer and topped with gold sprinkles. My daughter was very happy with it and we had a great time celebrating her 5th birthday with family.

There are unicorns all over the Internet and there are so many ways to make cakes and cupcakes so no matter what you do as long as it looks sparkly I think it is a winner!
