I have the perfect fairy cookie bar recipe for any little girls birthday, baby shower or brunch with a faerie theme or whimsical idea. These fairy bread cookies are the perfect addition to any party.

These could easily be unicorn cookie bars too with the newest trend of unicorn going wild! Simply frost these sugar cookies in the pan before slicing the cookies for an easy treat.

Fairy Cookie Bars

So how do we make these whimsical treat? You can really use anything you like in these bars as long as you use a good quantity of colored sprinkles and colored marshmallows as well. Use a thick layer of frosting and even more sprinkles and you have these unicorns or fairy cookie bar treats.

Unicorn or Faerie Cookie Bars

 

Ingredients

 

1 stick butter, unsalted, room temperature

4 oz cream cheese, softened

¾ brown sugar

2 tsp vanilla extract

2 eggs

1 tsp salt

1 tsp baking powder

2 cups flour

½ cups chocolate chips

½ cup coconut

½ cup sprinkles

½ cup colored marshmallows.

 

Directions

  1. Preheat oven to 350.
  2. Spray an 8×8 inch baking dish and set aside.
  3. In an electric mixer with a paddle attachment cream the butter, cream cheese and sugar until light and fluffy (3 minutes0
  4. Scrape down the sides. Add eggs and vanilla and mix until combined.
  5. Add the salt, baking powder and flour and mix well.
  6. Remove from electric mixer and fold in chocolate chips, coconut, sprinkles, and colored marshmallows.
  7. Pour into prepared pan.
  8. Bake for 35-40 minutes or until a toothpick comes out clean.
  9. Cool completely and frost if desired.
