Just like that school is out and summer is upon us. This means hot weather, longs days in the sun and ice cream treats every day! That’s right we have special treats everyday during the summer, that is what summer vacation is all about, isn’t it? My daughter is fascinated with unicorns- we even had a unicorn birthday cake this year. I wanted to create something special, so I decided on Unicorn Ice Cream Cone Treats
Can you go wrong with something as magically wonderful as a unicorn? We decided to make these unicorn cones this weekend to go along with all of the other magical goodness we make this summer. We love using Keebler Ice Cream Cups and Keebler Sugar Cones. I always stock up on both varieties when I am at Target because we usually have a house full with friends over and people visiting. All summer long.

There is nothing better than a Keebler Cone – in our Unicorn Variety of course with ice cream dripping down your hand to make you feel like a kid again. This Unicorn Cone Treat recipe was made with the sugar cone variety because I thought it looked more like a horn, but you can very easily make these unicorn treats with the Keebler Ice Cream Cups or even Keebler Waffle Cones if you prefer.
Unicorn Treats
(I made 6 cones)
1-1/2 cups white chocolate melting wafers
Food Coloring – we used pink and purple and left one layer white
Toppings- sprinkles (jimmies), mini chocolate chips, mini marshmallows and small candy coated chocolate balls.
Directions
Place a silicon mat on a baking tray ( you can use wax paper if you do not have a mat)
In a small microwave safe bowl, put ½ cup chocolate wafers. Microwave for 30 seconds and stir. Place back in the microwave for an additional 15-30 seconds and stir until your chocolate is in a smooth melted consistency. ** Please note watch this step closely microwave cooking times vary.
Add a few drops of food coloring depending on what color you would like and stir until it is all combined.
Dip the tops of the cones in the colored melted chocolate making sure to come down the sides of the cone a ways. The idea is that you will see at least 2-3 colors of melted chocolate.
Place back on mat to harden.
Continue with the remaining cones. Set aside.
Repeat the chocolate melting instructions with a second color in a separate bowl.
Dip the tops of the cones in the second colored melted chocolate making sure to not cover all of the first coat of chocolate. Some of the first colored chocolate should be peeking out the top.
Place back on mat to harden.
Continue with the remaining cones. Set aside.
Repeat with the final ½ cup chocolate melting wafers and heat the same way. This time when you dip the cones in the white you just want to get the opening edge and then immediately press into the toppings of your choice.
Make the remainder of your cones pressing into different toppings or all of the same- your choice!
Place all cones on baking mat and place in the refrigerator for 15 minutes to harden.
How cute are these Unicorn Treats? Top with your favorite ice cream or even fill with fresh berries. Oh baby- these are bound to be a hit!
Because these Unicorn Cone Treats are super easy to make they are perfect for any summer day- use whatever toppings or fixings you have on hand or what you prefer.
