Ingredients

andouille sausage
cut into 1-inch slices

venison
cut into 1-inch pieces

onion

green pepper
chopped

large celery stalk
chopped

beef broth

cans diced tomatoes

long grain white rice

Instructions
Preheat oven to 350.
In a large oven safe skillet or pot, sauté the meat until brown.
Add onions, celery and pepper. Cook until vegetables start to soften about 10 minutes.
Add the remaining ingredients, cover and place in oven to bake until rice is tender.
Approximately 45-60 minutes.
Serve immediately
