Ingredients

Green Squash
zucchini peeled and sliced thin

yellow onion
cut in half and sliced thin

red potatoes
cut in half and sliced thin
3
eggs
beaten
1
cup
shredded Mozzarella cheese

tbsp
vegetable oil

tsp
salt
1
tsp
ground pepper
1
tsp
Adobe seasoning
1 to
mato
sliced for serving
Instructions
In a skillet heat the oil and add the potatoes and onions. Cook until tender, constantly stirring.
Add the squash and cook until tender.
Add the eggs and cheese and cook until the whole mixture is combined. Add the seasoning.
Serve with fresh sliced tomatoes
