Did you know that you can freeze zucchini bread? If you are like me and have a HUGE amount of zucchinis in your garden you can freeze zucchini very easily. Simply make a few batches of your favorite zucchini bread and wrap them in foil and label them and pop them in the freezer. How easy is that? You can have homemade and delicious zucchini bread all winter long!
If you don’t want to actually have to make many loaves of bread, simply shred your zucchini and freeze it in zip top freezer bags in the quantity that you will use them for either for breads or recipes. I put approximately 3 cups of zucchini in a bag for use later. My mother-in-law gave me this tip and it works! SImply thaw the shredded zucchini and squeeze out the extra moisture. It really is that simple!
