Hard to believe that we are starting to get ready for Back to School. Now I know what you are thinking- it’s July, but soon we will have to do our school shopping, school supply lists and thinking of our school year routines.
As a teacher myself and mom to now 3 school aged children (yup the littlest is headed to school this year too!) this starts another nine months of crazy routines and schedules. There is nothing worse than coming home after a long day of work and not knowing what to make for dinner that the children will eat. Now I know I am not the only mom that has this problem but I do have an easy go-to meal that they will eat: Meatball Pasta Bake.
This recipe can be made ahead of time and frozen (think summer!) so that this way you simply have to unfreeze and put in the oven, serve with a side salad or cup of soup and bread and you have a full meal ready for any eaters! For more ideas and products visit the Campbell’s Back to School website.
For this recipe I use Prego Italian Sauce, I always have a few jars of this sauce on hand because we love homemade taste that has just the right balance of sweet and savory. My whole family enjoys eating this sauce and it gives just the right flavor for this meatball pasta bake.
Meatball Pasta Bake
1 lb pasta, cooked according to package directions
1 bag frozen Italian Meatballs, thawed.
1 jar Prego Italian Sauce
1 pkg shredded mozzarella
Preheat oven to 350.
In a large ball combine pasta, sauce and meatballs until well combined.
Place into a 13×9 baking dish.
Top with shredded cheese.
Bake for 30 minutes.
On our last trip to Walmart we stocked up on Pace Salsa, Prego Italian Sauce, Campbell’s Chicken Noodle Soup, and V8+Energy drink because of the great coupon that is currently offered. If your house is anything like mine during September try to stock up now on good deals at Walmart.
