This is the ultimate in cinnamon banana bread. I love to serve this cake for breakfast with butter. It is rich and creamy and a great way to use up your ripe bananas.

Cinnamon Banana Bread

I love to make this recipe on a Saturday because then we can have this for breakfast for the week served with fresh fruit or yogurt. You can even slice and toast this cake for a warm treat.

Cinnamon Banana Bread Recipe

Ingredients

1 stick butter, unsalted, room temperature

1-1/2 cup sugar

3 eggs

3 ripe bananas, mashed

4 cups flour

1tsp baking soda

1-1/2 tsp baking powder

1-1/2 cup sour cream

½ cup applesauce

1 tsp vanilla extract

2 TBSP cinnamon

Directions

Preheat oven to 350 and spray a bundt pan with non-stock spray.

In the bowl of an electric mixer with the paddle attachment, cream the butter and sugar together.

Add the eggs one at a time until combined.

Add the bananas, sour cream and applesauce, mix.

Add the dry ingredients and the vanilla until all the ingredients are fully incorporated.

Pour into prepared pan. Bake for 60 minutes.

Cool completely
