Blue Chocolate Chip Cookies

 

These adorable cookie monster cookies will be a hit at your next child’s birthday or school treat! These moist and chewy blue cookies are perfect for a Sesame Street party.

Adorable and delicious these cookie monster cookies are great for school parties, lunches and more. Plus, they are easy to make and to be honest the adults will love them too!

Ingredients for Cookie Monster Cookies

These cookies can be frozen after they are baked. Simply bring to room temperature on the counter before serving.

Ingredients

2 sticks unsalted butter, room temperature

1 cup sugar

1 egg

1 tsp vanilla extract

1 tsp almond extract

½ tsp baking soda

½ tsp baking powder

1 tsp salt

2-1/4 cups flour

1 cup mini chocolate chip cookies, chopped PLUS 18 more whole mini cookies

4-5 drops blue food coloring

Directions

Preheat oven to 350 and line 3 baking sheets with silicon mats.

In an electric mixer with the paddle attachment, blend the butter and sugar together until light and fluffy. (about 3 minutes)

Add the egg and extracts to combine.

Add the flour, salt, baking powder, and baking soda and combine well.

Add in the food coloring and mix well for a nice rich blue color.

Fold in the chopped cookies.

Scoop out the dough onto the prepared mats and press a whole mini chocolate chip cookie in the center of each.

Bake for 10-12 minutes.

Cool completely.

Once my cookies are baked goods are completely cooled, store in an airtight container. When freezing, use a zip top freezer bag.
