Easy Banana Mini Cakes

These mini banana cake bites are perfect for snacking or for a birthday party or after school snack. I love that the cake has banana in each bite and they look pretty too.

These frosted banana cakes are perfect for little fingers. I love that these cakes are so easy to make and you can really make them to any size that you want. My daughter loves to decorate them with pretty finishing touches.

 

Banana Snack Mini Cake Bites

 

Ingredients

 

3 medium ripe bananas mashed

¼ cup brown sugar

1/3 cup oil

¼ cup half and half

2 large eggs

1 TBSP cinnamon

1 TBSP vanilla extract

1 tsp almond extract

½ tsp baking soda

1 tsp salt

1-3/4 cup flour

Cream Cheese Frosting

8 oz cream cheese, room temperature

3-1/4 cup confectioner’s sugar

5 TBSP butter, room temperature

 

 

Directions

Heat oven to 350. Line a ½ sheet baking pan (with lip) with aluminum foil. And coat with cooking spray. Set aside.

In an electric mixer with e paddle attachment

Blend all ingredients until completely combined.

Spread batter in to prepared pan.

Bake 15-20 minutes until done.

Cool completely.

To make the frosting combine all ingredients in a mixer.

To assemble cakes:

Use a small circular cookie cutter into the cake to make small circles.

Place the frosting into a piping bag and top with another cake.

Pipe more icing on top and top with a white chocolate melting wafer.

 

Serve immediately or store in a container.

 

If you did not feel like making the frosting from scratch you can easily use a canned frosting. This would cut out a step and would make it easier and less time consuming.
