Easy Coconut Biscotti

There is nothing better than a coconut biscotti and coffee in the morning. This is also delicious as a late night treat as well. I don’t know about you but it seems like our family is running in so many different directions on so many different nights that we hardly have time to eat dinner.

Coconut Biscotti Recipe

A cheese plate one night or coconut biscotti on another night is really like a delicious meal! Well at least in my house it is!

Easy Coconut Biscotti

Ingredients

1-1/2 cup flour

1 tsp baking powder

¼ tsp baking soda

1 tsp salt

¾ cup sugar

1 TBSP vanilla extract

2 eggs

1 cup sweetened coconut

1 tsp cinnamon

Directions

Preheat oven to 300. Line a baking sheet with a silicon mat.

In the bowl of an electric mixer with the paddle attachment mix all the ingredients together until combined.

Shape the dough into a log that is 15-inches by approximately 3 inches.

Bake for 40 minutes.

Take it out of the oven and cut into 1-inch strips and place each piece on its side.

Bake for an additional 20 minutes.

Cool completely.
